Ingredients
- 3-4 cups thinly sliced and chopped red and/or green cabbage
- 1/4 cup thinly sliced green onions
- 1/2 cup chopped mint leaves
- 1/2 cup chopped cilantro
- 1/3 cup chopped salted peanuts, or more
- 1 1/2 T lime juice
- 1 T fish sauce
- 2 tsp. sweetener of your choice
- 1/4 – 1/2 tsp. dried red chile flakes
Directions
- In a small bowl, mix the lime juice, fish sauce, your preferred sweetener, and red chili flakes until the dressing comes together. Begin with the milder amount of chile flakes if you are unsure, then taste a dab and decide whether you want more heat.
- Cut the red and green cabbage into thin slices, then chop it until you have 3-4 cups. Transfer the cabbage to a medium-sized bowl, pour in the dressing, and toss well. Set it aside to soak up the flavors while you get the remaining ingredients ready.
- Slice the green onions. Rinse the mint and cilantro, then get them very dry in a salad spinner or with paper towels before chopping enough for 1/2 cup each of mint and cilantro. Use a chef's knife to roughly chop the peanuts.
- Add the green onions, mint, cilantro, and most of the peanuts to the dressed cabbage, then toss everything together. Serve immediately, finishing each portion with a small sprinkle of the remaining peanuts.
