Ingredients
- 1 large russet potato
- 1 Tbsp olive oil
- 1 tsp dried oregano
- 1/4 tsp garlic powder
- 1/4 tsp salt
- Freshly cracked pepper
- 1 Tbsp grated Parmesan
- Handful fresh parsley, optional
Directions
- Heat the oven to 400 degrees. Cover a baking sheet with parchment paper or aluminum foil.
- Scrub the potato thoroughly, then slice it into 1/2-inch strips and wedges. Arrange the pieces across the prepared baking sheet and drizzle the olive oil over them.
- In a bowl, stir together the oregano, garlic powder, salt, and freshly cracked pepper, then scatter the mixture over the potatoes. Toss everything right on the baking sheet until the potatoes are evenly coated with the oil and seasonings. Finish by sprinkling the grated Parmesan over the top.
- Bake in the fully heated oven for 25-30 minutes, until the potatoes are golden and the edges are lightly crisp. Turn the pieces halfway through baking. Add chopped fresh parsley on top, then serve right away.
