Tomato Basil Chicken Stew
A simple chicken and tomato stew with basil, vegetables and garlic, simmered until savory and finished with Parmesan.

Ingredients

- Garlic

- Onion
- Carrots
- Carrot
- Tomatoes
Directions
- Warm the oil in a large stockpot set over medium-high heat. Stir in the onion, carrots and celery, and cook for 7 minutes, stirring now and then, until the onion has softened and turned translucent.
- Add the garlic and cook for another minute or two, just until it smells fragrant. Stir in the remaining ingredients until everything is combined, then use a long spoon to press and break up the tomatoes.
- Bring the pot to a boil, then lower the heat to medium-low. Let the stew simmer with the lid partly on for 10 minutes.
- Taste and add more salt and pepper, if it needs it. Serve with freshly-grated Parmesan cheese.
- For the slow cooker version, add all ingredients except the cheese to the slow cooker and stir to combine. Cook on high for 3-4 hours, or on low for 6-8, then serve with freshly-grated Parmesan cheese.
