Ingredients
- Skins from 8 medium peeled tomatoes
- 1/4 teaspoon kosher salt
- 1/4 teaspoon granulated sugar
Directions
- Cover a microwave-safe plate with a double thickness of paper towels. Arrange as many tomato skins as you can in one flat layer without letting them overlap, about 1/4 of the skins.
- Microwave on high for 4 minutes. After that, heat in 20 second bursts until the skins feel dry and papery and break apart when you pinch them. Work through the rest of the skins the same way.
- Transfer the dried skins to a spice grinder or a mortar and pestle, along with the salt and sugar. Grind everything into a powder, then keep it in an air-tight container.
