Vanilla Plum Crumble Pie

Ingredients

  • One half recipe Easy Pie Dough, shaped, crimped, and chilled in a pie plate
  • 8 tablespoons butter, softened
  • 3/4 cup light brown sugar
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 12-14 red or Italian plums, pitted and cut into eighths
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch or 1/4 cup instant tapioca
  • Seeds from 1 vanilla bean pod

Directions

  1. Heat your oven to 425 degrees Fahrenheit. In a medium sized bowl, work the softened butter with the brown sugar by hand until it looks smooth and even. Add the oats, flour, and salt, then stir until everything comes together. Slide the bowl into the fridge and let the topping chill for 30 minutes.
  2. In a large bowl, add the plums, cornstarch or tapioca, sugar, and the seeds you have scraped from the vanilla bean. Toss everything together so the fruit is coated and the vanilla is distributed, then let it stand for 5 minutes.
  3. Spoon the plum mixture into the prepared crust. Scatter the cold topping over the fruit in rough clumps, letting the pieces stay a little wild. Bake at 425 degrees for 15 minutes, turning the pie partway through. Lower the oven to 375 degrees and bake for another 30-40 minutes, until the filling is bubbling across the surface. Let the pie rest for at least 45 minutes before you serve it.
