Vegan Banana Bread

Ingredients

  • 2 tablespoons flaxseed meal
  • 1/2 cup plus 2 tablespoons almond milk
  • 2 to 3 very ripe bananas, peeled
  • 1/3 cup walnut, coconut or avocado oil
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • Pinch of salt

Directions

  1. Set the oven to 350 degrees F. Fit a 4x8-inch loaf pan with parchment, leaving enough extra paper draped over the sides to lift the bread out later.
  2. For the flax egg, stir the flaxseed meal and almond milk together in a small bowl. Leave it alone to thicken while you get the rest of your ingredients measured.
  3. In a large mixing bowl, use a fork to mash the ripe bananas until the mixture is fully smooth. Mix the oil into the bananas, then stir in the sugar, the thickened flax mixture, and the vanilla. Add the flour, baking soda, and salt last, stirring until the batter comes together.
  4. Scrape the batter into the lined loaf pan. Bake for 50 minutes to 1 hour, stopping when a toothpick or cake tester pushed into the middle comes out clean.
  5. Take the bread out of the oven and let it settle in the pan for a few minutes. Use the overhanging parchment as handles to lift the banana bread from the pan, then let it cool all the way before you serve it. Slice and serve.
