Ingredients
- 1 1/2 cups all purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups sugar
- 1 teaspoon instant espresso powder
- 1 cup freshly brewed coffee
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 3/4 cup vegan chocolate chips or vegan chocolate, chopped
Directions
- Set an oven rack in the middle of the oven, then heat the oven to 350 degrees F. Line a muffin tin with paper liners.
- In a large bowl, whisk the flour, cocoa, baking soda, salt, sugar, and instant espresso powder together until everything is evenly mixed. Add the coffee, vanilla, and vinegar, and stir just until the batter comes together. Mix in the chocolate chips or chunks.
- Divide the batter among the lined muffin cups, filling each one 3/4 of the way. Bake for about 18 minutes, until a cake tester inserted into the center of a muffin comes out clean. Move the muffins to a wire rack to cool completely.
