Ingredients
- 3/4 cup packed light brown sugar
- 1/2 cup canola oil
- 2 tablespoons agave nectar
- 1/2 teaspoon salt
- 1 tablespoon water
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/4 cup desiccated coconut
- 1/4 teaspoon baking soda
- 1 1/4 cup chocolate chips
Directions
- Set an oven rack in the middle and heat the oven to 375 degrees F. Cover a baking sheet with parchment paper.
- In a large bowl, whisk together the brown sugar, oil, agave, salt, water, and vanilla until the mixture is smooth and combined.
- Add the coconut, flour, oats, baking soda, and chocolate chips, then stir until the dough comes together.
- Scoop the dough onto the prepared baking sheet, leaving the portions evenly spaced. Press each one gently until it is about 3/4-inch thick.
- Bake the cookies until they look lightly golden and the centers are just set, about 10 to 12 minutes.
- Leave the cookies on the pan for 10 minutes, then move them to a cooling rack so they can cool completely.
