Ingredients
- 4 leeks, well washed, root end and tops trimmed, sliced lengthwise into quarters and then chopped into 1-inch segments
- 1/3 cup fresh dill, well chopped
- 3/4 pound green beans, tops and tails trimmed
- Extra-virgin olive oil
- Fine-grain sea salt
Directions
- Set a large, heavy skillet over medium-high heat, then add a generous glug of olive oil, a generous pinch of salt, and the leeks. Stir everything together until the leeks look shiny and evenly coated.
- Cook the leeks, stirring often, until many of the pieces turn golden and crisp at the edges. In the beginning, stir every minute or two; as they take on color, move them around more frequently with a metal spatula. The browning should take about 7 – 10 minutes altogether.
- Stir in the dill, then add the green beans and toss them through the leek mixture. Cook for a couple more minutes, just until the beans look brighter and no longer taste raw. Transfer to a bowl or platter and serve right away.
