World's Easiest Garlicky Green Beans Stir Fry

Ingredients

  • 1 lb. fresh green beans
  • 2 T peanut oil
  • 2 T chopped garlic
  • 1/2 small yellow onion, cut in half top-to-bottom and then into slivers the same size as the beans
  • 1/4 tsp. salt
  • 1 T water
  • 2 T oyster sauce or gluten-free oyster sauce

Directions

  1. Trim the green beans at both ends. One easy way is to gather a handful, stand them upright in your hand, let the ends settle against the cutting board, and slice across to even them up; flip them and do the same on the other side. Cut the beans into 2 inch pieces, rinse them, and dry them in a salad spinner or with paper towels. If your beans came prewashed, you may be able to skip the rinse.
  2. Set a wok or sturdy frying pan over high heat for 1-2 minutes, until the pan is so hot you cannot comfortably hold your hand above it. Pour in the oil and let it warm for about 30 seconds, then add the garlic and onion slivers. Cook for 20-30 seconds, stirring constantly.
  3. Add the green beans and salt, and cook for about 2 minutes, stirring a few times as they sizzle. Pour in the water, cover the wok, and steam the beans for 5 minutes. Check once while they cook; if the pan looks dry, add about 1 tsp. more water.
  4. Take off the lid and stir in the oyster sauce. Cook for 2 minutes more, tossing and stirring until the beans are evenly coated. They should still have a little snap when they are finished. Serve hot. Leftovers can be refrigerated for a day or two and warmed in the microwave.
