Zucchini, Pine Nut, and Golden Raisin Salad

Ingredients

  • 2 tablespoons olive oil
  • 3 medium zucchini, sliced into rounds
  • 2 cloves garlic, peeled and finely chopped
  • Small handful golden raisins
  • Small handful pine nuts
  • Juice of 1/4 lemon, or more to taste
  • Sea salt and freshly cracked black pepper

Directions

Set a heavy-bottomed skillet, such as cast iron, over medium heat and warm the olive oil. When the oil is hot but not smoking, add the zucchini. Cook, stirring as you go, until the slices start to soften, about 5 minutes. Stir in the garlic, pine nuts, raisins, and a generous amount of salt and black pepper. Cook a little longer, until the garlic mellows and the pine nuts take on some color, about 2 to 3 minutes. Add lemon juice to taste and stir everything well. Move the salad onto a serving plate. If you want the little extra finish, drizzle with good olive oil.
