Absinthe Cookies

Ingredients

  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon cloves
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 3/4 cup plus 1 tablespoon olive oil
  • 1/2 cup absinthe
  • 1/4 cup sesame seeds

Directions

  1. Heat the oven to 400 degrees F, and cover a baking sheet with parchment paper.
  2. In a medium bowl, whisk the flour, baking powder, cloves, and salt until everything is evenly mixed.
  3. In a large bowl, beat the sugar and olive oil together until they come together. Pour in the absinthe and beat again until combined. Add the flour mixture, then beat until the dough forms. It may look a little crumbly, but you should be able to press it together easily with your hands.
  4. Shape the dough into 24 walnut-sized balls. Put the sesame seeds in a shallow bowl, then dip the top of each ball into the seeds. Arrange the cookies on the prepared baking sheet.
  5. Bake until the cookies are dry and just a little golden, about 20 minutes.
