Air Fryer Roasted Carrots with Moroccan Spice Mix

Ingredients

  • 1 lb. carrots, peeled and sliced in diagonal pieces. Organic whole carrots are best for this.
  • 2 T olive oil
  • 1/2 tsp. salt
  • Fresh ground black pepper to taste
  • This makes enough for 5 batches of roasted veggies. Store leftover spice mix in a small glass jar.
  • 2 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1/2 tsp. chile powder
  • 1/2 tsp. sweet paprika
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground ginger
  • 1/8 tsp. cayenne pepper
  • Pinch of ground cloves, optional

Directions

  1. Trim and peel the carrots, then slice them on the diagonal. For the wider ends, split them lengthwise first so the pieces end up close in size and thickness.
  2. In a small bowl, combine the cumin, coriander, chile powder, paprika, cinnamon, allspice, ginger, cayenne, and optional cloves for the seasoning blend.
  3. If your air fryer calls for it, heat it to 360F/185C. Coat the carrots with the olive oil, salt, black pepper, and 1 tsp. of the spice blend, tossing until the pieces are evenly seasoned.
  4. Place the carrots in the air fryer basket in an even layer. Cook for 7-8 minutes, then pull out the basket, check their progress, and turn the pieces over. Return the basket and cook for about 5-6 minutes longer, checking a little early since air fryers can vary.
  5. For the oven method, heat the oven to 475F/250C. If you are using a toaster oven that will not heat that high, set it to 450F/230C instead; convection is a good choice if you have it.
  6. Prepare the carrots, mix the spices, and toss the carrots with the oil and seasoning the same way as for the air fryer method. Line a shallow roasting pan with foil, or coat it with non-stick spray or olive oil.
  7. Spread the carrots across the pan in one layer. Roast for 20-25 minutes, turning them every 10 minutes, until they are lightly browned and a bit shriveled at the edges. Serve right away.
