Ingredients
- 1 head cauliflower
- 1/2 large red onion
- 2 Tbsp olive oil
- 1/2 Tbsp curry powder
- 1/4 tsp crushed red pepper, optional
- Salt and pepper to taste
- 1/2 cup frozen peas
Directions
- Set your oven to 400ºF. Trim away the cauliflower leaves and stem, then cut the head into bite-sized florets. Put the florets in a colander, rinse them with cool water, and let them drain really well, shaking off as much water as you can.
- While the cauliflower drains, slice the onion into strips. If you want cleanup to be painless, cover a baking sheet with foil. Add the cauliflower and red onion to the baking sheet, pour the olive oil over the top, and add the curry powder, red pepper flakes, salt, and pepper. Toss everything together until the vegetables are coated.
- Slide the baking sheet into the oven and roast for 45 minutes, giving the vegetables a stir at the halfway point. While they roast, thaw 1/2 cup of frozen peas.
- After 45 minutes, or once the cauliflower edges are golden brown, take the baking sheet out of the oven. Add the thawed peas and toss so they pick up the oil and spices. Serve warm.
