Ingredients
- 1 tablespoon butter
- 2 Golden Delicious apples, peeled and cut into 1/4 inch pieces
- 2 Bosc pears, peeled and cut into 1/4 inch pieces
- 1 tablespoon sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 recipe Easy Pie Dough
- 1 egg, beaten
Directions
- Warm the butter in a non-stick skillet until it melts, then add the apples and pears. Cook the fruit until it starts to soften, about 5 minutes. Scatter the sugar over the top and keep cooking, stirring frequently, until the fruit begins to release its juices. Stir the cornstarch and lemon juice together, then add that mixture to the pan. Let everything simmer until thickened, about 4 minutes. Take the pan off the heat and let the filling cool.
- Move your oven rack to the middle position and preheat the oven to 375 degrees. Line a baking sheet with foil. Split the dough into two pieces and roll it out to 1/8 inch thickness. Cut the dough into 4 squares, then spoon a tablespoon of filling near the bottom right corner of each square. Brush the pastry edges with the beaten egg, fold the pastry over the filling, and seal the edges by pressing them with a fork. Transfer the pies to the lined baking sheet, then repeat with the remaining filling and pastry.
- Using a sharp knife, cut steam vents in the top of each pie, then brush the tops with the remaining egg. Bake until the pastry is browned, about 20 minutes. Serve warm or at room temperature.
