Ingredients
- 3 cups flour
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking soda
- 3 teaspoons baking powder
- 2 cups sugar
- 14 tablespoons unsalted butter, at room temperature
- 2 eggs
- 3 teaspoons vanilla extract
- 1 cup buttermilk
- 2 Granny Smith apples, peeled, cored, and diced
Directions
- Heat the oven to 350 degrees F, and grease the muffin cups. In a bowl, whisk the flour, salt, cinnamon, nutmeg, baking powder, and baking soda together, then set it aside.
- In a large bowl, beat the sugar and butter together until the mixture is pale and airy, about 3 minutes. Beat in the eggs, then beat in the vanilla.
- Add 1/2 of the flour mixture to the batter, and beat only until it comes together. Mix in 1/2 cup buttermilk, then the remaining flour mixture, and finish with the final 1/2 cup buttermilk.
- Fold in the apples gently. Pour the batter into the muffin cups, filling them 2/3 full.
- Bake for about 25 minutes, until a cake tester inserted into a muffin comes out clean. Let the muffins sit in the pan for 5 minutes, then transfer them to a wire rack.
