Ingredients
- 1 1/4 cups all-purpose flour )
- 1 1/4 cups rolled old fashioned oats
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter,
- 3/4 cup packed light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup finely chopped peeled Granny Smith apple )
- 2 tsp fresh lemon juice
Directions
- Heat the oven to 350 degrees. Prepare two baking sheets, each 18 by 13-inch, by covering them with either parchment paper or silicone baking mats.
- Combine the flour, oats, cinnamon, baking soda and salt in a bowl, giving them a good 20 seconds of whisking so everything is evenly distributed. Put the bowl aside for the moment.
- In a stand mixer bowl with the paddle attached, beat the butter with the brown sugar until the mixture comes together smoothly. Add the egg and vanilla extract, and mix them in.
- In a small bowl, coat the apple pieces with the lemon juice. Add the dry ingredients to the butter mixture and mix just until blended, then fold in the apples.
- Portion the dough with a medium cookie scoop, or use 2 Tbsp of dough for each cookie, and place the mounds on the prepared pans with 2-inches of space between them. Press each mound down a little.
- Bake the cookies one sheet at a time in the heated oven until they look set, about 14 – 15 minutes.
- Allow the cookies to rest on the baking sheet for several minutes, then move them to a wire rack so they can finish cooling. Store the cooled cookies in an airtight container.
