Apple Pie Scones

Ingredients

  • 1 large egg
  • 1/4 cup unsweetened apple sauce
  • 1 tsp lemon juice
  • 1 Tbsp sugar
  • 1 medium apple
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 5 Tbsp cold butter
  • 1/2 cup powdered sugar
  • 1/2 tsp cinnamon
  • 2 tsp water

Directions

  1. Set your oven to 400 degrees. Rinse the apple, slice it into quarters, and remove the core from each section. Shred it on a box grater or the large holes of a cheese grater.
  2. In a medium bowl, whisk the egg, apple sauce, and lemon juice, then whisk in the sugar and shredded apple.
  3. In a large bowl, mix the flour with the salt, baking powder, cinnamon, and ginger. Add the butter and work it through the dry ingredients until the texture looks like rough, moist crumbs.
  4. Pour the apple-egg mixture into the big bowl with the flour and butter. Stir only until the dough comes together and you can’t see dry flour at the bottom of the bowl.
  5. Tip the dough onto a lightly floured surface and pat it into a disc that is 6-8 inches across and 1.5 inches thick. If the dough wants to cling, dust your hands and the top of the dough with a bit more flour. Slice the disc into 8 wedges.
  6. Line a baking sheet with parchment paper, then arrange the wedges on it. Bake in the fully heated oven for 18-20 minutes, until the tops take on a very light golden color. Let the scones cool all the way.
  7. For the glaze, stir the powdered sugar, cinnamon, and water together until you have a thick paste. When the scones are completely cool, drizzle it over the tops.
