Asparagus and Sweet Pea Frittata with Minty Spring Salad

Ingredients

  • 10 large eggs
  • Kosher salt
  • 1/4 cup plus 1 tablespoon extra-virgin olive oil, divided, plus more for drizzling
  • 1 small yellow onion, diced
  • One bunch asparagus, woody ends trimmed, half cut into 1/4-inch dice, half stalks shaved with a vegetable peeler and tips halved
  • 1 cup sweet peas from about 1/2 pound fresh shelling peas or one bag frozen peas
  • Freshly ground black pepper
  • 2 ounces pea tendrils or other tender lettuce
  • 1/2 cup loosely packed torn mint leaves from about 10 sprigs
  • 1 tablespoon fresh lemon juice from 1 lemon

Directions

  1. Move the broiler rack so it sits 10 inches below the heat, then turn the broiler to high. In a large bowl, whisk the eggs with 2 generous pinches of salt, and put the bowl aside.
  2. Warm 2 tablespoons oil in a medium non-stick skillet that can go under the broiler, using medium-high heat, until the oil looks glossy. Stir in the onion and cook it until it has just softened and turned translucent, about 2 minutes.
  3. Add the diced asparagus and peas to the skillet, then sprinkle with salt and pepper. Cook, stirring often, until the vegetables are tender without taking on color, about 6 minutes.
  4. Pour in the eggs and continue cooking, stirring as they set, until soft, moist curds are distributed through the pan, 1 to 2 minutes. Slide the skillet under the broiler and cook until the surface has set, about 3 minutes.
  5. Allow the frittata to cool a little. Work a thin spatula around the edges and underneath to release any places that are holding onto the pan. Place a large plate upside down over the skillet, then flip the skillet and plate together in one confident motion so the frittata lands on the plate. Set it aside.
  6. Put the shaved asparagus and halved tips in a large bowl with the pea tendrils and mint. Drizzle in the remaining 3 tablespoons oil along with the lemon juice, add salt and pepper, and toss until everything is lightly coated. Slice the frittata into wedges and serve the salad alongside.
