Ingredients
- 1 tablespoon lemon juice from 1 lemon
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 2 cups packed arugula
- Two small, ripe avocados, mashed
- 4 slices wheat bread
- 2 tablespoons roughly chopped walnuts
Directions
- In a large bowl, whisk the lemon juice with the olive oil until combined, then add salt and freshly ground black pepper to taste. Add the arugula and toss gently so the leaves get lightly coated, then set the bowl aside.
- Sprinkle the mashed avocado with salt. Cover 1 side of each bread slice with the avocado, spreading it evenly.
- Divide the chopped walnuts and dressed arugula evenly between 2 of the bread slices that have avocado on them. Close the sandwiches with the remaining avocado-topped slices and serve.
