Crispy, Cheesy Party Sandwiches

Ingredients

  • 36 slices thin white bread, crusts removed
  • 8 ounces unsalted butter, melted
  • 1 can hearts of palm, drained and finely chopped
  • 4 ounces sharp cheddar cheese, finely grated
  • 3 tablespoons mayonnaise
  • 2 tablespoons finely minced onion
  • 1 teaspoon dried mustard
  • 1 teaspoon grated lemon zest
  • 1/8 teaspoon cayenne pepper
  • Salt and pepper

Directions

  1. Heat the oven to 325 degrees F, with racks set in the upper middle and lower middle positions. Brush the butter onto both sides of every bread slice, then set the bread aside.
  2. In a medium bowl, stir together the hearts of palm, cheddar, mayonnaise, onion, mustard, zest, and cayenne. Add salt and pepper to taste.
  3. Spread about 1 tablespoon of the cheese mixture onto each of 24 slices of bread. To build each sandwich, set 1 coated slice over a 2nd coated slice, then finish with one of the plain buttered slices. Press the layers gently so they stick together, and cut each sandwich into 3 pieces.
  4. Place the sandwiches on 2 baking sheets, spacing them about 1 inch apart. Bake for about 20 minutes, until golden, turning them carefully with a spatula halfway through. Set the trays on cooling racks and let the sandwiches cool about 5 minutes before serving.
