Ingredients
- 1 slice country or sandwich bread, approximately 1/2 inch thick
- Extra-virgin olive oil
- 1/2 medium pitted and peeled Hass avocado
- 1 teaspoon soy sauce, plus more to taste
- 4 to 5 thin slices seedless cucumber, or enough to cover surface of bread
- Thinly sliced scallion, to garnish
- Shichimi togarashi, to taste
Directions
- Brush the bread with a little olive oil, then toast it until it’s exactly as crisp and golden as you like. While that’s happening, mash the avocado with the soy sauce in a bowl.
- Spread the avocado mixture over the toast, then layer on the cucumber and scatter the scallion over the top. Finish with shichimi togarashi to taste, and serve right away.
