A hearty avocado toast layered with goat cheese, smoked salmon, tomato, red onion, capers, and lemon for a bright, savory breakfast or lunch.

Ingredients
- 1 slice country or sourdough bread, approximately 1/2 inch thick
- Extra-virgin olive oil
- 1 tablespoon goat cheese, or enough to spread a thin layer over surface of bread
- 1/2 medium pitted and peeled Hass avocado
- 1 teaspoon capers, plus more to taste

- 3 thin slices red onion, cut in rounds from 1 medium onion
- 3 pieces thinly sliced smoked salmon
- Freshly squeezed lemon juice to taste, from 1/2 lemon
- Kosher salt and freshly ground black pepper
Directions
- Brush the bread lightly with olive oil, then toast it until it’s done the way you like. Cover the toast with a thin layer of goat cheese.
- Add the avocado on top, and use a fork to mash and spread it across the bread. Scatter the capers over the avocado, then layer on the tomato, red onion, and smoked salmon.
- Finish with lemon juice, then season with salt and pepper. Serve right away.
