Ingredients
- 3 oz. bacon
- 8 oz. can pineapple chunks in juice
- 1 Tbsp brown sugar
- 1 large pizza dough
- 1/2 cup pizza sauce
- 4 oz. shredded Monterrey Jack cheese
- 2 green onions
Directions
- Cut the bacon into 1-inch pieces. Set a large skillet over medium heat and cook the bacon until the edges are browned and crisp while the centers still have a little softness, about 5 minutes. It will cook a bit more once it goes into the oven. Move the bacon to a plate lined with paper towels, then pour away most of the fat from the skillet.
- Drain the canned pineapple very well, then halve the chunks so the pieces are smaller. Put the pineapple in the skillet with the brown sugar. Cook over medium heat, stirring as needed, until the fruit is sticky and browned around the edges, about 5 minutes. Take the skillet off the heat.
- Heat the oven to 450ºF. Pull and stretch the pizza dough so it fills a 14 inch pizza pan. Spoon the sauce across the dough, then scatter the shredded Monterrey Jack cheese over it. Add the cooked bacon and the caramelized pineapple pieces on top.
- Bake for about 15 minutes, until the crust turns golden brown and the cheese is bubbling. Once the pizza comes out of the oven, add the sliced green onions, cut it into 8 pieces, and serve.
