Breakfast Pizza

Ingredients

  • 1 lb ball pizza dough
  • 1/2 cup pizza sauce
  • 1 cup shredded cheese
  • 1 medium roma tomato
  • 3 oz ham
  • 4 large eggs
  • 2 sliced green onions
  • 1 Tbsp cornmeal
  • As needed non-stick spray

Directions

  1. If your pizza dough is frozen, let it warm up to room temperature before you try to pull it into a round; it will behave so much better. As it thaws, cut the tomato and green onion into slices, then dice the ham.
  2. Set the oven to 450 degrees. Coat a perforated pizza pan with non-stick spray, then dust it with corn meal. Work the dough out into a 16 inch circle and lay it on the prepared pan.
  3. Build the pizza in this order: sauce first, then half of the cheese, followed by the tomatoes, ham, green onions, eggs, and the rest of the cheese. If you are using monterrey jack and cheddar, put the monterrey jack in the lower cheese layer and save the cheddar for the top. Leave the eggs whole and raw on the pizza, or scramble them first and scatter them across the surface.
  4. Bake at 450 degrees for about 15 minutes, until you see melted cheese and a golden brown crust.
