Prep 20 min · Cook 1 hr · Total 1 hr 25 min · Makes 1 9-inch quiche (8 slices)

Ingredients
- 8 slices thick bacon
- 1 lb. ground beef
- 1/2 onion, finely chopped
- 1/4 cup dill pickles, finely chopped
- 1 1/4 cup grated cheese
- 8 eggs, well beaten
- 1/2 cup heavy cream
Directions
- Set the oven to 350F/175C. Coat a glass or crockery pie pan, either 9 inch or 9.5 inch, with non-stick spray; it may not be essential, but cleanup will be much friendlier.
- Warm a large frying pan on medium-high, then cook the bacon until crisp and browned. Transfer it to a plate or cutting board, let it cool enough to handle, and crumble it. Set aside a little crumbled bacon for the finish, and scatter the remaining bacon in the pie pan.
- If there is more bacon fat in the skillet than you need, pour some off. Put the pan back over medium-high heat, using the remaining bacon fat, and add the ground beef, crumbling it in with your fingers. Cook until no pink remains and the meat begins to brown, continuing to break it up with a turner as it cooks.
- Spoon the cooked beef into the pie pan. While the beef is cooking, finely chop 1/2 an onion and 1/4 cup dill pickles, then sprinkle both over the beef.
- Add the one cup grated cheese, or more, across the filling in the pie pan.
- Whisk the eggs until fully blended, then whisk in the cream. Pour that mixture over everything in the pan, and use a fork to gently move the filling around so the ingredients are evenly distributed.
- Finish the top with the remaining grated cheese and the bacon you held back.
- Bake for 35-45 minutes, until the center is set, the cheese has melted, and the top is well browned. Serve hot.
