Make Ahead Microwave Breakfast Scrambles

Ingredients

  • 2 oz. ham, diced
  • 1/2 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/2 cup shredded sharp cheddar
  • 2 tsp butter
  • 1/2 tsp seasoning salt
  • 8 large eggs

Directions

  1. Divide the ham, bell pepper, onion, and cheddar evenly among 4 resealable containers. Slice the butter into 4 pieces, each 1/2 teaspoon, and tuck one piece into each container. Add about 1/8 teaspoon seasoning salt to each one. Close the containers and refrigerate them for up to 4-5 days.
  2. When it is time to cook one scramble, empty one container into a ceramic mug, crack in 2 large eggs, and mix everything together.
  3. Set a paper towel or other microwave-safe cover loosely over the mug, then microwave on high for 30 seconds. Stir, then cook for another 15 seconds. Stir once more, and keep microwaving in 15 second bursts, stirring each time, until the eggs are mostly set but still moist. Serve right away.
