Ingredients
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup light-brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 3/4 cup buttermilk
- Softened butter, for doughnut pan
- 3 3/4 cups powdered sugar
- 5 Tbsp milk, then more as needed
- 1 Tbsp heavy cream
- 3/4 tsp vanilla extract
- 8 Oreos, crushed
- 1 cup heavy cream
- 3 Tbsp powdered sugar
- 2 Oreos, finely crushed
Directions
- Heat the oven to 350 degrees. Rub the doughnut pans with softened butter, then set them aside. In a mixing bowl, whisk the flour, cocoa powder, baking powder, baking soda and salt until the dry ingredients look evenly combined; make a hollow in the center. In a second mixing bowl, add the granulated sugar, light-brown sugar, vegetable oil, eggs, vanilla extract and buttermilk, then mix until everything comes together. Pour the wet ingredients into the hollow in the dry ingredients, and stir with a wooden spoon just until the batter is combined. Move the batter into a large piping bag, then pipe it into the buttered doughnut pans, filling each well about 3/4 full. Bake in the heated oven for 12 – 13 minutes, until a toothpick inserted into a doughnut comes out clean. Turn the doughnuts out onto a wire rack to cool. Once they are completely cool, spoon Vanilla Icing over the tops and spread it across, then immediately add the crushed Oreos from the 8 Oreos. Once the icing has set, pipe Oreo Whipped Cream into the centers. Serve immediately, or refrigerate in an airtight container.
- To make the Vanilla Icing, measure 3 3/4 cups powdered sugar into a mixing bowl. Add 5 Tbsp milk, 1 Tbsp heavy cream and the vanilla, then whisk until smooth. If it needs loosening, add more milk a few tsp at a time, keeping it spreadable but still fairly thick, like a substantial glaze.
- To make the Oreo Whipped Cream, beat the heavy cream in a mixing bowl with an electric hand mixer on high speed until soft peaks form. Add the powdered sugar and continue beating until the peaks are stiff. Fold in the finely crushed Oreos.
