Ingredients
- 1 Tbsp Italian seasoning blend
- 1/8 tsp garlic powder
- 1/8 tsp salt
- 2 Tbsp olive oil
- 2 boneless, skinless chicken breasts
- 1/4 cup pizza sauce
- 4 oz. fresh mozzarella
- 8 slices pepperoni
Directions
- Set your oven to 400ºF. Combine the Italian seasoning blend, garlic powder, salt, and olive oil in a small bowl, stirring until the seasonings are evenly mixed into the oil.
- Lay the chicken breasts on a cutting board, then place plastic wrap over the top so things stay tidy while you work. With a mallet or rolling pin, flatten the chicken until it is evenly thick, about 3/4-inch. Slice each breast in half so you have 2 similar pieces from each one.
- Arrange the chicken in a shallow baking dish or on a baking sheet, leaving at least 1 inch of room around each piece. Spoon the seasoned oil over the tops of the chicken and spread it across the surface.
- Slide the chicken into the fully heated 400ºF oven and bake for 15 minutes. While it cooks, cut the mozzarella into slices.
- When the 15 minutes are up, take the chicken out of the oven. Add 1 Tbsp pizza sauce to the top of each piece, then finish each one with about 1oz. mozzarella and 2 slices of pepperoni.
- Put the chicken back in the oven for another 5-7 minutes, until the chicken reaches an internal temperature of 165ºF. Take it out of the oven and serve.
