Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 2 avocados, diced
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro leaves
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons extra virgin olive oil
Directions
- Start with 1/2 head of chopped romaine lettuce ready to go.
- Heat the oven to 400 degrees F.
- In a small bowl, combine the lime juice with the extra virgin olive oil, red onion and cilantro, whisking until blended. Put it aside.
- Put the diced avocados into a medium bowl, add salt and pepper to taste, and fold gently to mix.
- Add olive oil to an oven-safe skillet and warm it over medium-high until it shimmers. Lay in the salmon fillets and sear for 2 minutes on each side, until both sides are golden brown. Slide the skillet into the hot oven and bake for 8 minutes, or until the salmon is cooked through. Take it out and let the fish cool a little, then use a fork to pull it into large flakes.
- For the salad, add the chopped romaine lettuce to a large bowl. Spoon in the avocado mixture, add the salmon flakes, and pour over the reserved dressing. Toss gently to bring everything together, then serve immediately.
