Ingredients
- 1/2 cup orzo
- 1 tablespoon olive oil
- 1 white onion, chopped
- 2 garlic cloves, chopped
- 1/2 teaspoon red pepper flakes
- 1/4 cup white wine
- 1 1/2 cups tomatoes, peeled and chopped
- 1 teaspoon oregano
- 2 tablespoons chopped parsley
- 2 scallions, green parts only, sliced
- 1/2 pound shrimp, peeled and deviened
- 1/2 cup feta, crumbled
- Salt and pepper
Directions
- Heat the oven to 425 degrees F. Set a pot of water over high heat and bring it to a boil. Add the orzo and cook it according to the package directions until it is al dente. Drain it in a colander, then put it aside.
- While the pasta cooks, warm the oil in a large skillet over medium heat. Add the onion and cook, stirring now and then, until it looks translucent, about 5 minutes. Stir in the garlic and red pepper flakes, and cook for 30 seconds, just until the aroma blooms.
- Add the white wine, tomato, and oregano to the skillet. Stir everything together and bring the sauce to a simmer. Let it cook for 5 minutes. Add salt and pepper to taste, then take the skillet off the heat and mix in the parsley and scallions.
- In a baking dish, stir together the cooked orzo, the sauce, and the shrimp. Scatter the crumbled feta over the top. Transfer the dish to the 425 degrees F oven and bake for 10 to 15 minutes, until the shrimp are cooked through.
