Ingredients
- 2 slices high quality white sandwich bread, crusts removed, torn into rough chunks.
- 2 boneless skinless salmon filets, about 6 ounces each
- Kosher salt and freshly ground black pepper
- 1 tablespoon unsalted butter, softened, plus extra for the salmon
- 1/2 tablespoon Dijon mustard
- 1 teaspoon whole grain mustard
- 1 teaspoon fresh thyme leaves
Directions
- Heat the broiler on high, and move the rack so it sits 6 inches from the heat. In a food processor, pulse the bread into rough crumbs, using about 10 to 12 quick, one-second pulses. Sprinkle the salmon with salt and pepper, then leave it nearby.
- In a medium bowl, combine the breadcrumbs, 1 tablespoon butter, both mustards, and thyme. Pinch the mixture with your fingers until the butter is worked through and the crumbs hold together. Add salt and pepper.
- Coat the underside of each salmon fillet with a thin swipe of butter. For 2 minutes, warm a medium skillet over medium-high heat. Place the salmon in the pan buttered side down, and let it cook undisturbed until the bottom develops a good crust, about 2 minutes.
- Spoon the crumb mixture over the salmon, then slide the skillet under the broiler. Broil until the topping is browned and crisp, 4 to 5 minutes. Bring it to the table right away.
