Baked Spaghetti with Sausage

Ingredients

  • 1 Tbsp olive oil
  • 1 small yellow onion
  • 2 cloves garlic
  • 1/2 lb. Italian Sausage
  • 1 can tomato paste
  • 1 can diced or crushed tomatoes
  • 1/2 tsp salt
  • 1 Tbsp sugar
  • 12 oz. spaghetti
  • 2 oz. feta cheese
  • 1/4 cup grated parmesan
  • 1 cup shredded mozzarella

Directions

  1. Chop the onion into small dice and finely mince the garlic. Warm 1 tablespoon of olive oil in a large pot over medium-low heat, then cook the onion and garlic until they’re softened and see-through, about 5 minutes.
  2. Crumble the Italian sausage into the pot and cook it all the way through, breaking it into bits as it browns. Spoon in the tomato paste, stir it through, and keep it on the heat for about 2-3 minutes, until the paste deepens a little in color. Add the diced or crushed tomatoes, salt, and sugar, then stir and warm the sauce through.
  3. Heat the oven to 350 degrees. Set a large pot of water over high heat and bring it to a boil; you can get this going while the sauce is coming together. Cook the spaghetti as the package directs, boiling it for 7-10 minutes. Drain the pasta and fold it into the meat sauce.
  4. Coat an 8x8 inch casserole dish with non-stick spray. Spoon in half of the spaghetti mixture, then sprinkle the feta cheese over it. Add the remaining spaghetti, scatter the parmesan cheese on top, and finish with the mozzarella.
  5. Bake the spaghetti in the 350 degree oven for 30 minutes. Give it about 10 minutes to settle before you cut it into 8 pieces and serve.
