Ingredients
- 1 large eggplant
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 3 tablespoons chopped fresh parsley
- 2 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
- 1/4 cup olive oil, divided
Directions
- Heat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with 2 tablespoons olive oil.
- Stir the garlic, parsley, Parmesan cheese, mozzarella cheese, and ricotta cheese together in a small bowl, then put the filling aside.
- Arrange the eggplant slices on the oiled baking sheet. Brush the slices with the remaining olive oil, then add salt and pepper to taste. Bake in the hot oven for 10 minutes.
- Take the pan out of the oven and divide the cheese mixture across the eggplant slices, spreading it evenly. Roll each slice up, then set the rolls back on the baking sheet with the seam underneath. Brush the tops with the remaining olive oil and add a little extra Parmesan cheese, if desired.
- Return the pan to the oven and bake for another 15 minutes, until the rolls are golden brown and the cheese is bubbling. Serve warm or at room temperature.
