Ingredients
- 1/2 T olive oil
- 1/2 cup very finely diced red pepper
- 1/4 cup very finely diced red onion
- 1/4 cup very finely diced green olives
- 1/3 cup crumbled Feta
- 1-2 T mayo or lite mayo
Directions
- Heat the oven to 425F/220C. Coat a small glass or ceramic casserole dish with nonstick spray.
- Warm the olive oil in a nonstick frying pan over medium-high heat. Add the red pepper and onion, and cook for about 3 minutes, stirring as they soften.
- Add the olives to the pan and cook for about 2 minutes longer. Take the pan off the heat.
- Arrange the fish in the prepared casserole dish, then season it with salt and pepper.
- Spread a thin, even layer of mayo over the top of each piece of fish.
- Mix the feta into the pepper, onion, and olive mixture, then spoon it over the fish. Use all of it, mounding it on top; if a little tumbles off during baking, that is fine, but gently press the topping so it clings as well as it can.
- Bake until the fish is white and opaque all the way through and the topping is just beginning to brown, 10-15 minutes. Thin pieces may be ready after 10 minutes, while thicker fish will need the full 15 minutes.
- Serve hot.
