Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 1 – 2 Tbsp lemon zest
- 4 Tbsp butter, softened
- 4 Tbsp vegetable oil, divided
- 2 large eggs
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 3 Tbsp fresh lemon juice
- 1 2/3 cups fresh blueberries
- Topping:
- 1 1/2 Tbsp sparkling sugar/raw sugar
Directions
- Heat the oven to 425 degrees. Set paper liners into a 12-cup muffin pan.
- In a mixing bowl, whisk the flour, baking powder, baking soda, and salt for 20 seconds, then put the bowl aside.
- Pour the sugar into the bowl of an electric stand mixer. Add the lemon zest and beat with the paddle attachment for 15 seconds.
- Add the butter and 1 Tbsp vegetable oil, then beat until the mixture looks light and fluffy. Beat in the remaining 3 Tbsp vegetable oil.
- Add the eggs, mixing them in one at a time. Take the bowl off the stand mixer.
- In a separate bowl or liquid measuring cup, whisk the buttermilk, sour cream, and lemon juice together.
- Add 1/3 of the flour mixture to the butter mixture and fold just until it is almost incorporated. Add 1/2 of the buttermilk mixture and fold again until nearly mixed in. Repeat with another addition of the flour mixture and the remaining buttermilk mixture. Fold in the last 1/3 of the flour mixture until it is just about combined.
- Fold in the blueberries. By now the batter should be fully mixed, but do not overdo it; it will be thick and beginning to puff up.
- Spoon the batter into the lined muffin cups, mounding each one generously full, about a slightly heaped 1/3 cup per cup. Use all the batter. If using sanding sugar, scatter it evenly over the muffin tops.
- Bake for 8 minutes in the heated oven, then lower the oven temperature to 400 degrees. Continue baking for 10 – 13 minutes more, until a toothpick poked into the center comes out without wet batter.
- Take the muffins out of the pan and let them cool on a wire rack. Store the muffins in an airtight container.
