Lemon Garlic Roasted Chicken

Ingredients

  • 2 small or 1 large lemon
  • 1/3 cup olive oil
  • 6 cloves garlic
  • 1/4 tsp salt
  • Freshly cracked pepper
  • 2 lbs split chicken breasts

Directions

  1. Heat the oven to 275ºF. Juice the lemon(s) until you have about 3 Tbsp, then cut what is left into slices. Finely chop 2 garlic cloves, then remove the skins from the other 4. In a small bowl, whisk the lemon juice with the olive oil, chopped garlic, salt, and pepper.
  2. Use a paper towel to dry the chicken breasts well. Set the chicken into a casserole dish made of glass or ceramic. Pour the lemon mixture over the chicken, then use a spoon to move it around so the entire surface is coated. Tuck the 4 peeled garlic cloves and the sliced lemon around the chicken. If bitter notes bug you, hold those extra lemon slices back until after baking. Seal the dish snugly with foil.
  3. Slide the dish into the 275ºF oven and roast for 90 minutes. Once those 90 minutes are up, increase the heat to 425ºF, take off the foil, and spoon the juices from the dish over the chicken. Put the chicken back in the oven and continue roasting, uncovered, for another 20 minutes at 425ºF, until the skin turns golden brown and crisp.
  4. Give the chicken 5-10 minutes to rest before you slice it. Serve it warm, with the pan juices spooned over the top.
