Ingredients
- 1/2 cup balsamic vinegar
- 1/4 cup white wine or low-sodium chicken broth
- 2 Tbsp honey
- 1 Tbsp dijon mustard
- 1 rosemary sprig
- 1 cloves garlic, minced
- 4 salmon fillets
- Salt and freshly ground black pepper
- 2 tsp olive oil, divided
- Finely minced rosemary or parsley, for garnish, optional
Directions
- Set the salmon out at room temperature for 10 – 15 minutes. While it rests, add the balsamic vinegar, white wine, honey, dijon mustard, rosemary and garlic to a medium saucepan. Bring the mixture to a boil over medium-high heat, then lower the heat to medium-low and let it simmer, stirring now and then, until it thickens and cooks down to about 1/3 cup, about 10 – 15 minutes. Take it off the heat, strain it through a fine strainer into a heat proof dish, and set it aside.
- Sprinkle the salmon on both sides with salt and pepper. Warm the oil in a 12-inch non-stick skillet over medium-high heat. Add the fillets and leave them alone until the bottoms are well browned, about 3 – 4 minutes.
- Gently turn the salmon over and cook the second side for 2 – 3 minutes longer, until the fish is cooked through. Serve warm, spooning the balsamic rosemary glaze over each fillet. Finish with finely minced rosemary or parsley, if you like.
