Ingredients
- 4 skinless salmon fillets
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil, plus more for brushing grill
- 2 TBSP finely minced fresh parsley, plus more for garnish
- 4 tsp finely minced fresh rosemary
- 2 tsp finely minced fresh thyme
- 2 tsp minced garlic
- 2 tsp fresh lemon zest
- 1 tsp dijon mustard
- 1 tsp honey
- Salt and freshly ground black pepper
Directions
- Arrange the salmon in a dish that measures 11 by 7-inch. In a small bowl, combine 1 tsp salt and 1/2 tsp pepper with the honey, dijon mustard, lemon zest, garlic, thyme, rosemary, parsley, olive oil, and lemon juice; whisk until evenly mixed.
- Pour the marinade over the fish, lifting the fillets so some of it can slide underneath. Cover the dish and refrigerate for 30 minutes, turning the salmon once at the halfway point.
- During the last 10 minutes of marinating, heat the grill to medium-high.
- Brush the grill grates with oil. Spoon some of the herbs back onto the salmon, or spread them over with your hands, then lift the fillets out of the marinade and set them on the grill.
- Cook for about 3 – 5 minutes on each side, until the salmon is cooked through.
- Serve warm, with extra parsley on top if desired.
