Ingredients
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup mashed overripe bananas
- 1/4 cup sour cream
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light-brown sugar
- 1 large egg
- 1 recipe Fluffy Vanilla Bean Frosting
- 1 cup salted butter, at room temperature
- Seeds from two small vanilla beans I sell them!
- 4 cups powdered sugar
- 2 1/2 Tbsp milk
- 1 tsp vanilla extract
Directions
- Heat the oven to 350 degrees. In a mixing bowl, combine the flour, baking powder, baking soda and salt with a whisk, then put it aside. In another mixing bowl, whisk the mashed banana with the sour cream, and set that aside too.
- In a large mixing bowl, beat the butter, granulated sugar and light-brown sugar with an electric hand mixer on medium-high speed until the mixture looks lighter and airy, about 3-4 minutes. Mix in the egg, then add the banana mixture and beat until combined. Add the dry ingredients gradually, mixing only until everything comes together.
- Drop rounded tablespoonfuls of dough, about 1 1/2 Tbsp each, onto Silpat or parchment lined baking sheets, spacing them about 1 1/2 inches apart. Neaten the edges and press the cookies down as needed so each one is about 1 1/2 – 2 inches across. You can also spoon the batter into a pastry bag fitted with a 1/4 inch plain tip and pipe it into 1 1/2 inch rounds on the baking sheet; with this method, you may end up with more than 2 dozen pies.
- Bake at 350 degrees for 12 – 13 minutes, until the edges turn golden. Leave the cookies on the baking sheet for 2 minutes, then move them to a wire rack and cool them completely. Spread frosting on one cookie and top with another to make sandwiches. Store them in an airtight container, and refrigerate them if they will not be served within a few hours.
