Ingredients
- 3/4 cup mashed ripe bananas
- 1 large egg
- 2 Tbsp brown sugar
- 1/2 tsp vanilla
- 2 Tbsp olive oil
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup ground flaxseed
- 1/4 cup chopped walnuts, optional
Directions
- Set your oven to 425ºF. In a medium bowl, whisk the mashed banana with the egg. Add the brown sugar, vanilla, and olive oil, and whisk until smooth.
- In another medium bowl, stir the flour, baking powder, salt, flaxseed, and walnuts together.
- Pour the banana mixture into the bowl with the flour mixture, then stir just until you no longer see dry flour on the bottom. Go easy here, because overmixing is the muffin enemy.
- Add paper liners to 6 cups of a muffin tin, then divide the batter evenly among those 6 lined cups. The batter should come nearly to the top.
- Move the muffins to the oven and bake at 425ºF for 5 minutes. Keep the oven door closed, lower the temperature to 350ºF, and bake for 20 minutes more.
- Once the muffins have baked, take them out of the tin so they can cool. Eat them right away, or let them cool completely before storing them in an airtight container in the refrigerator.
