Ingredients
- 1/4 cup butter
- 1/4 cup flour
- 4 cups turkey drippings or turkey stock
- Kosher salt and freshly ground black pepper
Directions
- Set a medium saucepan over medium high heat and melt the butter. Add the flour while whisking, then cook it, stirring often, until the mixture turns pale golden, about 2 minutes.
- Pour in the turkey drippings or stock little by little, whisking constantly as you add it in a smooth stream. Bring the gravy up to a boil, then lower the heat so it simmers, and cook until it has reduced to 3 cups, 10 to 15 minutes.
- Take the pan off the heat and add salt and pepper to taste. Serve right away, or transfer to an airtight container and refrigerate for up to a week, warming it over medium-low heat before serving.
