Ingredients
- 1 Tbsp cooking oil
- 2 cloves garlic, minced
- 1/2 lb. ground beef
- 1 can kidney beans
- 1 can black beans
- 8 oz. tomato sauce
- 2 Tbsp tomato paste
- 2 Tbsp apple cider vinegar
- 2 Tbsp brown sugar
- 2 Tbsp molasses
- 1/2 Tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp cayenne pepper
- Freshly cracked pepper
- Salt to taste
- 4 cups cooked rice
- 4 oz. shredded cheddar
- 2 green onions, sliced
Directions
- Warm the oil and minced garlic together in a large skillet. Cook over medium heat for 1 minute, then crumble in the ground beef and keep cooking until it is done through. If the beef releases a lot of grease, drain off the extra before continuing.
- Rinse the 2 cans of beans, drain them thoroughly, and add them to the skillet with the beef.
- For the sauce, add the tomato sauce and tomato paste, then mix in apple cider vinegar, brown sugar, and molasses. Stir in Dijon mustard, Worcestershire sauce, the smoked paprika, the garlic powder, the onion powder, cayenne, and some freshly cracked pepper.
- Cook and stir until the sauce ingredients come together and thicken. When the skillet reaches a gentle simmer, keep it there for 5 minutes, stirring often. Taste and add salt as needed, about 1/2 tsp.
- For each bowl, start with 1 cup cooked rice. Spoon 1 cup BBQ Beef and Beans over the rice, then add roughly 1/4 cup of the shredded cheddar and finish with sliced green onion sprinkled over top.
