Beet Hummus
Earthy beets turn into a tangy, cumin-scented hummus that’s smooth, vivid, and made for scooping or spreading.
Prep 10 min · Makes about 2 cups

Ingredients
- 1/2 pound beets, scrubbed clean, cooked, peeled, and cubed
- 2 Tbsp tahini sesame seed paste
- 5 Tbsp lemon juice
- 1 small clove garlic, chopped
- 1 Tbsp ground cumin
- 1 Tbsp lemon zest
- Generous pinch of sea salt or Kosher salt
- Fresh ground pepper to taste
Directions
- Add everything to the bowl of a food processor, or use a blender, and pulse until the mixture is smooth. Give it a taste, then tweak the seasoning and ingredients however you like.
- Chill it, and keep it in the refrigerator for up to 3 days; for longer keeping, put it in the freezer.
- Serve it with pita chips, sliced cucumber or celery, or spread it on crostini with goat cheese and shaved mint.
