Bibimbap – the Ultimate Bowl Meal

Ingredients

  • 4 cups cooked jasmine rice
  • 1/2 Tbsp cooking oil
  • 6 cups fresh spinach, loosely packed
  • 1 tsp toasted sesame oil
  • Pinch of salt
  • 1/2 lb ground beef
  • 2 Tbsp chili garlic sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • 1 carrot
  • 1 cucumber
  • 2 green onions
  • 4 large eggs
  • 1/4 cup kimchi
  • 1 Tbsp sesame seeds

Directions

  1. If the rice is not ready yet, start it before anything else so the rest of the bowl can come together while it cooks. You’ll need 4 cups cooked rice. Make the spinach next: warm a large skillet over medium heat, add the cooking oil, and tilt the pan so the oil spreads across the surface. Add the fresh spinach and cook it for a few minutes, just until it collapses. Spoon the sesame oil over it, add a light pinch of salt, and transfer the spinach to a clean bowl.
  2. Put the ground beef into the same skillet you used for the spinach. Cook it until it is completely browned, then stir in the chili garlic sauce, soy sauce, and brown sugar. Continue cooking for about 1 minute, until the sauce is evenly distributed and clings to the beef. Turn off the heat.
  3. Get the fresh vegetables ready. Peel the carrot and shred it on the large holes of a cheese grater. Slice the cucumber thinly, then slice the green onions.
  4. Cook 4 large eggs by frying or soft boiling them, or make only as many as you’re serving right away. If you’re prepping bowls ahead, cook the egg fresh each day.
  5. Assemble each bowl with 1 cup cooked rice first, then add 1/4 of the spinach, 1/4 of the beef, sliced cucumber, shredded carrot, a cooked egg, and about a tablespoon of kimchi. Finish with sliced green onions and sesame seeds over the top. You do not need exact amounts for each topping; divide everything evenly, or adjust each bowl as you like.
