Ingredients
- 6 to 8 slices leftover birthday cake, chilled in the refrigerator overnight
- 4 eggs
- 1/2 cup milk or light cream
- 3 tablespoons sugar
- Dash of cinnamon or other spices, to taste
- 2 to 4 tablespoons butter, for frying
- Confectioners' sugar glaze or sprinkles, to garnish
Directions
- In a large bowl, whisk together the eggs, milk or cream, sugar, and any spices you want to use until the mixture looks smooth and a little foamy around the rim.
- Take the cake out of the refrigerator. Unchilled cake will still work, but an overnight chill helps the frosting stay put instead of melting everywhere once it hits the pan. Cut the cake into thick pieces.
- Add 2 to 4 tablespoons butter to a frying pan. Set the heat to medium-high and let the butter melt. When it begins to bubble gently, the pan is ready for the cake.
- Lower each cake slice into the egg mixture, making sure both sides are well coated. It is fine to dunk the whole slice. Move it straight into the frying pan, adding 2 or 3 slices at a time if your pan has room.
- Cook each slice for 1 minute or so, until the edges begin to lift slightly. If you want to check, ease up one side with a spatula and look for browning underneath. Flip and cook the other side the same way, turning carefully so the frosting does not smear through the pan.
- Lift the slices from the pan and move them to a serving platter or straight onto plates. Continue with the rest of the cake until all the slices are cooked. Add confectioners' sugar glaze and sprinkles if you like, then serve immediately.
