Ingredients
- 2 sheets puff pastry, thawed
- 2/3 cup berry jam
- 2 tsp cornstarch
- 1 large egg
- 1 Tbsp water
- 1 1/2 Tbsp salted butter, melted
- 1 cup powdered sugar
- 1 1/2 Tbsp half and half, then more if needed
- 1/4 tsp vanilla extract
- 1/8 tsp almond extract
Directions
- Heat the oven to 400 degrees. Set up a baking sheet with parchment paper or silicone liners. Put 1 sheet of puff pastry on a lightly floured work surface, then slice it into 6 matching rectangles.
- Stir the jam and cornstarch together in a small bowl. Spoon 1 1/2 Tbsp of the jam mixture onto 3 of the pastry rectangles, spreading it over the center and leaving about a 1/2-inch border bare on every side.
- In another small bowl, beat the egg with 1 Tbsp water. Dab a thin layer of the egg mixture around the uncovered pastry edges. Set the plain pastry rectangles on top of the jam-topped pieces, then press the edges together to close them. Move them to the refrigerator while you make the second batch the same way with the remaining sheet of puff pastry.
- Lightly coat the tops of the strudels with the egg wash. Bake until the pastry is golden, about 20 minutes. Cool on a wire rack until warm, then drizzle with icing.
- To make the icing, whisk all of the icing ingredients in a small bowl until smooth and combined. Thin it with more half and half if needed. Spoon it into a small resealable bag, snip off one corner, and drizzle it over the strudels.
