Ingredients
- 8 slices of excellent, hearty pumpernickel bread
- 3/4 pound of excellent, very sharp orange cheddar cheese
- 1 Granny Smith apple, sliced very thinly
- 2 tablespoons of Dijon mustard
- Salt and pepper
- 1/2 teaspoon of chopped fresh thyme leaves, optional
- Butter
Directions
- Warm a griddle or skillet over medium heat. Cut the cheddar into thin slices, then lay it over 4 slices of the bread.
- Add a light layer of apple slices over the cheese; you will have some apple left over. Top those with the bread slices prepared with mustard and seasonings, closing the sandwiches.
- Melt a small pat of butter on the hot griddle. Cook the sandwiches for about 4 minutes on each side, until the cheddar has melted and the bread is toasted and crisp.
