Ingredients
- 2 cups all-purpose flour
- 1 cup wheat bran
- 1/2 cup white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg, lightly beaten
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 cups fresh blackberries, divided
- 2 tablespoons melted butter
Directions
- Heat the oven to 350 degrees. Coat 3 muffin pans with nonstick cooking spray, or use paper liners instead.
- In a large bowl, stir together the flour, baking soda, salt and bran. In a separate medium bowl, combine the melted, cooled butter with the brown sugar, molasses, zucchini, sour cream and milk.
- Add the wet mixture to the dry mixture and stir just to bring the batter together, then carefully fold in the blackberries.
- Fill the muffin cups 2/3 full. Bake for 28-30 minutes, until a toothpick poked into the middle comes out clean.
