Ingredients
- 1/2 cup oat bran
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons melted butter or coconut oil
- 2 tablespoons honey or maple syrup
- 2 large eggs, lightly beaten
- 1/2 cup plain Greek yogurt or sour cream
- 1 teaspoon vanilla extract
- 3/4 cup unsweetened applesauce
- 1/2 cup chopped walnuts, optional
Directions
- Set the oven to 375°F. Prepare a 12-cup muffin pan by tucking paper liners into the cups.
- In a medium mixing bowl, stir together the melted butter or coconut oil, honey or maple syrup, eggs, yogurt or sour cream, vanilla extract, applesauce and walnuts, if you’re adding them, until the mixture looks evenly blended.
- Use another bowl for the dry mixture. Whisk the nutmeg, cinnamon, all-purpose flour, whole wheat flour, oat bran, baking powder, baking soda and salt until everything is evenly distributed.
- Tip the dry mixture into the wet mixture, then fold gently just until the batter comes together. Stop as soon as you no longer see dry streaks.
- Spoon the batter into the lined muffin cups, sharing it evenly. Bake for 18-20 minutes, until a toothpick poked into the middle of a muffin comes out clean.
- Leave the muffins in the pan for 5 minutes, then move them to a wire rack so they can finish cooling before you serve them.
